Description
This fresh and colorful Corn Salad is bursting with sweet corn, juicy cherry tomatoes, crisp cucumber, and a zesty lime dressing. It’s the perfect quick side dish for BBQs, potlucks, meal prep, or easy weeknight dinners.

- 4 large ears fresh corn
- 1 ½ cups diced bell pepper (red and green)
- 1 pint cherry tomatoes, halved
- 1 cup English cucumber, diced
- ½ cup red onion, finely diced
- 1/3 cup fresh cilantro, chopped
- 3/4 cup Cotija cheese
Dressing
- 3 tablespoons avocado oil (or olive oil)
- ¼ cup lime juice
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon salt
- 1 teaspoon dried parsley
- ½ teaspoon black pepper
- ¼ teaspoon cumin
- ¼ teaspoon garlic powder
- ¼ teaspoon chili powder
Instructions
- Make the dressing:
Combine all dressing ingredients in a jar with a lid. Shake well and refrigerate while preparing the salad ingredients. - Cook the corn:
Bring a large pot of salted water to a boil. Add corn and cook for 4 minutes.
Drain and rinse with cold water until cooled. - Cut the kernels:
Slice the kernels off the cob using a sharp knife and transfer to a large bowl. - Assemble the salad:
Add bell peppers, cherry tomatoes, cucumber, red onion, cilantro, and Cotija cheese to the bowl. - Dress and toss:
Shake dressing again and pour over salad. Toss until evenly coated. - Serve:
Serve immediately or refrigerate up to 1 day. If making ahead, add dressing and cheese just before serving.
Notes
- If prepping in advance, store dressing separately for best texture.
- Feta cheese can be substituted for Cotija.
- For extra heat, add diced jalapeño.
- Frozen corn may be used; thaw and blanch briefly before mixing.
