  • 2 lbs beef stew meat or sirloin tips, cut into bite-sized pieces

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 cups beef broth

  • 1 can cream of mushroom soup

  • 1 tbsp Worcestershire sauce

  • 1 tbsp soy sauce

  • 2 tbsp flour (for thickening)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp fresh or dried thyme

  • 1 tbsp olive oil (for browning)


Instructions

  1. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add beef tips in batches and brown on all sides for 4–5 minutes per batch. Transfer to the Crock Pot.

  2. Sauté Aromatics: In the same skillet, add onions and sauté for 3–4 minutes. Add garlic and cook for 30 seconds. Add to the Crock Pot.

  3. Mix the Gravy: In a bowl, whisk together beef broth, cream of mushroom soup, Worcestershire sauce, soy sauce, flour, salt, pepper, and thyme. Pour over beef and onions, stirring to combine.

  4. Slow Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours until the beef is tender and the gravy thickens.

  5. Serve & Enjoy: Taste and adjust seasoning. Serve over mashed potatoes, rice, or egg noodles. Garnish with thyme or parsley if desired.

Notes

Browning the meat first adds a rich, deep flavor—don’t skip it!
If the gravy is too thick, add a splash of beef broth. Too thin? Whisk in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) and cook 15 minutes longer.
