Description
Crock Pot Beef Tips and Gravy is the ultimate comfort food—tender beef slow-cooked in a rich, savory gravy. This easy set-it-and-forget-it recipe makes busy weeknights feel like Sunday dinner. Serve it over mashed potatoes, rice, or noodles for a cozy, satisfying meal your whole family will love.
Ingredients
2 lbs beef stew meat or sirloin tips, cut into bite-sized pieces
1 onion, diced
2 cloves garlic, minced
2 cups beef broth
1 can cream of mushroom soup
1 tbsp Worcestershire sauce
1 tbsp soy sauce
2 tbsp flour (for thickening)
1 tsp salt
½ tsp black pepper
1 tsp fresh or dried thyme
1 tbsp olive oil (for browning)
Instructions
Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add beef tips in batches and brown on all sides for 4–5 minutes per batch. Transfer to the Crock Pot.
Sauté Aromatics: In the same skillet, add onions and sauté for 3–4 minutes. Add garlic and cook for 30 seconds. Add to the Crock Pot.
Mix the Gravy: In a bowl, whisk together beef broth, cream of mushroom soup, Worcestershire sauce, soy sauce, flour, salt, pepper, and thyme. Pour over beef and onions, stirring to combine.
Slow Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours until the beef is tender and the gravy thickens.
Serve & Enjoy: Taste and adjust seasoning. Serve over mashed potatoes, rice, or egg noodles. Garnish with thyme or parsley if desired.
Notes
Browning the meat first adds a rich, deep flavor—don’t skip it!
If the gravy is too thick, add a splash of beef broth. Too thin? Whisk in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp water) and cook 15 minutes longer.
Great for meal prep—leftovers taste even better the next day!
