Description

Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

  • 1/2 cup soy sauce

  • 1/2 cup packed brown sugar

  • 1/4 cup bourbon

  • 1 tablespoon ketchup

  • 1 tablespoon apple cider vinegar

  • 1 teaspoon garlic powder

  • 1 teaspoon ground ginger

  • 1/2 teaspoon red pepper flakes (optional)

  • 2 tablespoons cornstarch

  • 2 tablespoons water

  • 2 green onions, sliced for garnish

  • Cooked rice, for serving


Instructions

  1. Prepare chicken: Cut chicken thighs into bite-sized pieces and set aside.

  2. Mix sauce: In a bowl, whisk together soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic powder, ground ginger, and red pepper flakes.

  3. Combine in slow cooker: Place chicken in the crock pot, pour sauce over, and stir to coat.

  4. Cook: Cover and cook on low for 4–6 hours or high for 2–3 hours until chicken is tender.

  5. Thicken sauce: 30 minutes before serving, mix cornstarch and water in a small bowl. Stir into the crock pot and let the sauce thicken.

  6. Serve: Spoon bourbon chicken over rice, garnish with green onions, and enjoy!

Notes

For a non-alcoholic version, replace bourbon with apple juice or chicken broth.
Add more red pepper flakes or hot sauce for extra heat.
