This Crock Pot Bourbon Chicken is the ultimate sweet and savory slow cooker dinner. Tender chicken is simmered in a rich bourbon-infused sauce with hints of brown sugar, soy sauce, and spices. Perfect over rice for an easy, family-friendly meal that tastes like takeout but is so much better!
Ingredients
1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
1/2 cup soy sauce
1/2 cup packed brown sugar
1/4 cup bourbon
1 tablespoon ketchup
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon ground ginger
1/2 teaspoon red pepper flakes (optional)
2 tablespoons cornstarch
2 tablespoons water
2 green onions, sliced for garnish
Cooked rice, for serving
Instructions
Prepare chicken: Cut chicken thighs into bite-sized pieces and set aside.
Mix sauce: In a bowl, whisk together soy sauce, brown sugar, bourbon, ketchup, apple cider vinegar, garlic powder, ground ginger, and red pepper flakes.
Combine in slow cooker: Place chicken in the crock pot, pour sauce over, and stir to coat.
Cook: Cover and cook on low for 4–6 hours or high for 2–3 hours until chicken is tender.
Thicken sauce: 30 minutes before serving, mix cornstarch and water in a small bowl. Stir into the crock pot and let the sauce thicken.
Serve: Spoon bourbon chicken over rice, garnish with green onions, and enjoy!
Notes
For a non-alcoholic version, replace bourbon with apple juice or chicken broth.
Add more red pepper flakes or hot sauce for extra heat.
