Ingredients
2 boneless, skinless chicken breasts (cut into 1-inch pieces)
1 teaspoon minced garlic
1 teaspoon black pepper
1 teaspoon salt
½ onion, chopped
3 cups chicken broth
1 can cream of chicken soup (10.5 oz)
1 ½ cups brown rice (uncooked)
2 cups shredded cheddar cheese
Instructions
Add the chicken, garlic, salt, pepper, onion, chicken broth, cream of chicken soup, and uncooked brown rice to the crock pot. Stir to combine.
Cover and cook on high for 3.5–4 hours, or until the rice absorbs the broth and becomes tender.
Stir in the shredded cheddar cheese. Cover for 5–7 minutes to let the cheese melt.
Serve warm and enjoy!
Notes
If the mixture seems thick, add a splash of chicken broth before serving.
Brown rice works best—white rice becomes mushy in slow cookers.
