Ingredients
6 cups diced potatoes
2 cups shredded sharp cheddar cheese
6 slices cooked bacon, crumbled
1 packet ranch seasoning mix
4 cups chicken or vegetable broth
1 cup heavy cream or half-and-half
Salt and pepper, to taste
Optional: extra cheese, bacon bits, chives
Instructions
Peel and dice potatoes into 1-inch cubes.
Add diced potatoes to the crock pot. Sprinkle ranch seasoning on top.
Add shredded cheddar cheese and crumbled bacon over the potatoes.
Pour broth over all ingredients.
Cover and cook on Low for 7–8 hours or High for 4 hours, until potatoes are tender.
Stir in heavy cream (or half-and-half).
Blend 1–2 cups of the soup using an immersion blender to thicken, then return blended portion to the pot.
