Description

This rich and creamy Crock Pot Crack Potato Soup is the ultimate comfort meal. Loaded with tender potatoes, cheddar cheese, crispy bacon, and a velvety ranch-seasoned broth, this easy slow cooker recipe delivers effortless cozy flavor with every bite.

Ingredients

Scale
  • 6 cups diced potatoes

  • 2 cups shredded sharp cheddar cheese

  • 6 slices cooked bacon, crumbled

  • 1 packet ranch seasoning mix

  • 4 cups chicken or vegetable broth

  • 1 cup heavy cream or half-and-half

  • Salt and pepper, to taste

  • Optional: extra cheese, bacon bits, chives

Instructions

  1. Peel and dice potatoes into 1-inch cubes.

  2. Add diced potatoes to the crock pot. Sprinkle ranch seasoning on top.

  3. Add shredded cheddar cheese and crumbled bacon over the potatoes.

  4. Pour broth over all ingredients.

  5. Cover and cook on Low for 7–8 hours or High for 4 hours, until potatoes are tender.

  6. Stir in heavy cream (or half-and-half).

  7. Blend 1–2 cups of the soup using an immersion blender to thicken, then return blended portion to the pot.

  8. Season with salt and pepper to taste.

  9. Ladle into bowls and garnish with cheese, bacon bits, or fresh chives

Notes

For a lighter version, swap heavy cream for whole milk.

For extra thickness, blend more of the potatoes.

Prefer a vegetarian version? Use vegetable broth and omit the bacon.

Leftovers thicken naturally—add a splash of broth when reheating if needed.
