Crockpot Chicken Piccata is a cozy, slow-cooked version of the classic Italian favorite. Tender chicken breasts simmer in a bright lemon-butter sauce with capers, creating an effortless yet elegant dinner perfect for busy weeknights or relaxed weekends.
Ingredients
3–4 boneless, skinless chicken breasts
3 cloves garlic, minced
½ cup fresh lemon juice
¾ cup low-sodium chicken broth
3 tablespoons capers, rinsed and drained
2 tablespoons butter
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Cooked pasta or rice, for serving (optional)
Instructions
Lightly season the chicken breasts with salt and pepper on both sides.
(Optional) Sear the chicken in a hot skillet with a little oil until lightly golden on both sides, about 2 minutes per side.
Place the chicken in the crockpot.
Add the garlic, lemon juice, chicken broth, and capers over the chicken.
Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is tender and cooked through.
About 15 minutes before serving, stir in the butter and allow it to melt into the sauce.
Taste and adjust seasoning if needed.
Serve warm over pasta or rice and garnish with fresh parsley.
Notes
Searing the chicken adds extra flavor but can be skipped if you’re short on time.
For a thicker sauce, remove the lid during the last 20 minutes of cooking.
Leftovers store well in the refrigerator for up to 3 days.
