For the Ground Beef

  • 1 pound ground beef, preferably 85% lean
  • 2 cloves garlic, minced
  • 1/4 cup hot honey, divided
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder, optional
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste

For the Sweet Potatoes

  • 1 medium sweet potato, peeled and cut into small cubes
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

For the Bowls

  • 1 cup cooked rice
  • 2 large eggs
  • 1 avocado, sliced
  • 1/4 cup crumbled queso fresco or feta cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon sesame seeds, optional
  • Hot sauce, optional

Instructions

  1. Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
  2. Add the diced sweet potato to a bowl. Toss with olive oil, salt, and black pepper. Spread the cubes in a single layer on the prepared baking sheet.
  3. Roast the sweet potatoes for 20 to 25 minutes, tossing halfway through, until tender and lightly crisp around the edges.
  4. While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles, until browned and cooked through. Drain excess grease if needed.
  5. Reduce the heat to medium. Add the garlic, smoked paprika, chili powder, salt, and black pepper. Cook for about 30 seconds, stirring constantly.
  6. Add 2 to 3 tablespoons of the hot honey to the beef. Stir well and cook for 2 minutes, until the beef is glossy and evenly coated.
  7. Heat a nonstick skillet over medium heat and lightly coat it with oil or cooking spray. Fry the eggs to your preferred doneness.
  8. Divide the cooked rice between two bowls. Top each bowl with hot honey beef, roasted sweet potatoes, sliced avocado, and a fried egg.
  9. Sprinkle with crumbled cheese, cilantro, and sesame seeds. Drizzle with the remaining hot honey or hot sauce, then serve immediately.

Notes

  • Regular honey mixed with red pepper flakes can be used instead of prepared hot honey.
  • Use white rice, brown rice, quinoa, or cauliflower rice as the base.
  • Ground turkey or ground chicken may be substituted for the beef.
  • For less heat, omit the chili powder and use plain honey.
  • Store the beef, rice, and sweet potatoes in separate airtight containers for up to 4 days.
  • Add avocado and fried eggs shortly before serving for the best texture.
