For the Ground Beef
- 1 pound ground beef, preferably 85% lean
- 2 cloves garlic, minced
- 1/4 cup hot honey, divided
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder, optional

- 1/4 teaspoon black pepper, or to taste
For the Sweet Potatoes
- 1 medium sweet potato, peeled and cut into small cubes
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
For the Bowls
- 1 cup cooked rice
- 2 large eggs
- 1 avocado, sliced
- 1/4 cup crumbled queso fresco or feta cheese
- 2 tablespoons chopped fresh cilantro
- 1 teaspoon sesame seeds, optional
- Hot sauce, optional
Instructions
- Preheat the oven to 425°F. Line a baking sheet with parchment paper or lightly grease it.
- Add the diced sweet potato to a bowl. Toss with olive oil, salt, and black pepper. Spread the cubes in a single layer on the prepared baking sheet.
- Roast the sweet potatoes for 20 to 25 minutes, tossing halfway through, until tender and lightly crisp around the edges.
- While the sweet potatoes roast, heat a large skillet over medium-high heat. Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles, until browned and cooked through. Drain excess grease if needed.
- Reduce the heat to medium. Add the garlic, smoked paprika, chili powder, salt, and black pepper. Cook for about 30 seconds, stirring constantly.
- Add 2 to 3 tablespoons of the hot honey to the beef. Stir well and cook for 2 minutes, until the beef is glossy and evenly coated.
- Heat a nonstick skillet over medium heat and lightly coat it with oil or cooking spray. Fry the eggs to your preferred doneness.
- Divide the cooked rice between two bowls. Top each bowl with hot honey beef, roasted sweet potatoes, sliced avocado, and a fried egg.
- Sprinkle with crumbled cheese, cilantro, and sesame seeds. Drizzle with the remaining hot honey or hot sauce, then serve immediately.
Notes
- Regular honey mixed with red pepper flakes can be used instead of prepared hot honey.
- Use white rice, brown rice, quinoa, or cauliflower rice as the base.
- Ground turkey or ground chicken may be substituted for the beef.
- For less heat, omit the chili powder and use plain honey.
- Store the beef, rice, and sweet potatoes in separate airtight containers for up to 4 days.
- Add avocado and fried eggs shortly before serving for the best texture.
