For the Chicken & Skewers
- 15 wooden skewers, soaked in water for 30 minutes
- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon chili powder
- 2 tablespoons extra virgin olive oil
- 4 yellow peaches, quartered, then halved
- 3 medium jalapeno peppers, halved, seeded, and cut into chunks
For the Peach Glaze
- ½ cup peach preserves
- 1 tablespoon extra virgin olive oil
- 1 teaspoon soy sauce
- 1 teaspoon apple cider vinegar
- 1 teaspoon Dijon mustard
- ½ teaspoon garlic, minced
- ½ teaspoon kosher salt
- ⅛ teaspoon black pepper
- ⅛ teaspoon red pepper flakes
Instructions
- Soak wooden skewers in water for 30 minutes.
- In a large bowl, combine chicken, kosher salt, black pepper, chili powder, and olive oil. Toss until evenly coated.
- Thread each skewer with peach, chicken, jalapeno, chicken, jalapeno, chicken, and peach, or arrange ingredients as desired.
- Preheat the air fryer to 375°F (190°C).
- Lightly brush the skewers with olive oil to prevent sticking.
- Arrange skewers in a single layer in the air fryer basket. Cook in batches if needed.
- Air fry for 11–12 minutes, or until the chicken reaches an internal temperature of 165°F.
- While the skewers cook, prepare the glaze. Add all glaze ingredients to a medium saucepan and stir until combined.
- Heat over medium-low heat until warmed through and smooth.
- Remove skewers from the air fryer and generously brush with the warm peach glaze.
- Serve immediately and enjoy.
Notes
- Use ripe but firm peaches so they hold their shape during cooking.
- Remove all jalapeno seeds for a milder flavor.
- For extra heat, leave some seeds in or add more red pepper flakes.
- A meat thermometer is the easiest way to avoid overcooking the chicken.
