These Jalapeno Peach Chicken Skewers combine juicy chicken, sweet peaches, and spicy jalapenos for the perfect balance of sweet heat. For the Chicken & Skewers

  • 15 wooden skewers, soaked in water for 30 minutes
  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon chili powder
  • 2 tablespoons extra virgin olive oil
  • 4 yellow peaches, quartered, then halved
  • 3 medium jalapeno peppers, halved, seeded, and cut into chunks

For the Peach Glaze

  • ½ cup peach preserves
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic, minced
  • ½ teaspoon kosher salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon red pepper flakes

Instructions

  1. Soak wooden skewers in water for 30 minutes.
  2. In a large bowl, combine chicken, kosher salt, black pepper, chili powder, and olive oil. Toss until evenly coated.
  3. Thread each skewer with peach, chicken, jalapeno, chicken, jalapeno, chicken, and peach, or arrange ingredients as desired.
  4. Preheat the air fryer to 375°F (190°C).
  5. Lightly brush the skewers with olive oil to prevent sticking.
  6. Arrange skewers in a single layer in the air fryer basket. Cook in batches if needed.
  7. Air fry for 11–12 minutes, or until the chicken reaches an internal temperature of 165°F.
  8. While the skewers cook, prepare the glaze. Add all glaze ingredients to a medium saucepan and stir until combined.
  9. Heat over medium-low heat until warmed through and smooth.
  10. Remove skewers from the air fryer and generously brush with the warm peach glaze.
  11. Serve immediately and enjoy.

Notes

  • Use ripe but firm peaches so they hold their shape during cooking.
  • Remove all jalapeno seeds for a milder flavor.
  • For extra heat, leave some seeds in or add more red pepper flakes.
  • A meat thermometer is the easiest way to avoid overcooking the chicken.
