  • 4 boneless, skinless chicken breast halves
  • 3 tablespoons soy sauce (or coconut aminos for gluten-free)
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • Juice of 1 lime
  • 1 teaspoon minced garlic
  • 1 teaspoon fresh cilantro, finely chopped
  • 2 tablespoons red bell pepper, finely chopped
  • Optional: pinch of crushed red pepper or minced red jalapeño

Instructions

  1. In a medium bowl, whisk together soy sauce, honey, vegetable oil, lime juice, garlic, cilantro, and red bell pepper until combined.
  2. Place chicken breasts in a zip-top bag or shallow dish. Pour marinade over the chicken and coat evenly.
  3. Refrigerate for at least 30 minutes, up to 2 hours.
  4. Preheat grill to high heat. Lightly oil grates if needed.
  5. Remove chicken from marinade and discard used marinade.
  6. Grill chicken for 6–8 minutes per side, or until internal temperature reaches 165°F.
  7. Let chicken rest for 5 minutes before serving.
  8. Optional: Broil for 2 minutes for extra char.
