Description

For the Salad

  • 1 bunch fresh asparagus, trimmed
  • 1 cup cherry tomatoes, halved
  • ½ cup Kalamata olives
  • ½ red onion, thinly sliced
  • ½ cup yellow or red bell pepper, chopped
  • ¼ cup crumbled feta cheese

For the Dressing

  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 clove garlic, minced
  • ½ tsp dried oregano
  • Salt and black pepper to taste

Instructions

  1. Blanch the asparagus:
    Bring a pot of water to a boil. Add asparagus and cook for 2–3 minutes until bright green and slightly tender. Transfer immediately to ice water to stop cooking. Drain well.
  2. Chop vegetables:
    Cut asparagus into bite-sized pieces and place in a large bowl. Add cherry tomatoes, Kalamata olives, red onion, and bell peppers.
  3. Prepare dressing:
    In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, and black pepper.
  4. Combine:
    Pour dressing over salad and toss gently to coat evenly.
  5. Add feta:
    Sprinkle crumbled feta over the salad and lightly toss.
  6. Serve:
    Serve immediately or refrigerate for 20 minutes to allow flavors to develop.

Notes

  • Do not overcook the asparagus; it should remain tender-crisp.
  • Soak sliced red onion in cold water for 10 minutes to reduce sharpness.
