Description

Juicy Orange Dijon Grilled Chicken marinated in fresh orange juice, Dijon mustard, garlic, brown sugar, and apple cider vinegar, then grilled until tender and caramelized. It is an easy, flavorful dinner for busy weeknights, summer cookouts, or meal prep.


Ingredients

  • ¼ cup olive oil
  • ¼ cup apple cider vinegar
  • Juice of 1 orange
  • ½ cup packed brown sugar
  • 3 tablespoons Dijon mustard
  • 3 garlic cloves, minced
  • 1 teaspoon salt
  • 4 boneless, skinless chicken breasts
  • Chopped fresh parsley, optional garnish
  • Orange slices, optional garnish


Instructions

  1. In a medium bowl, whisk together the olive oil, apple cider vinegar, orange juice, brown sugar, Dijon mustard, garlic, and salt until well combined.
  2. Place the chicken breasts in a large zip-top bag or shallow dish.
  3. Pour the marinade over the chicken and turn the pieces until evenly coated.
  4. Seal the bag or cover the dish. Refrigerate for at least 4 hours or overnight.
  5. Preheat the grill to medium heat, about 375–400°F.
  6. Remove the chicken from the marinade and let the excess drip off. Discard the used marinade.
  7. Grill the chicken for 7–8 minutes per side, or until the thickest part reaches an internal temperature of 165°F.
  8. Transfer the chicken to a clean plate and let it rest for 5 minutes.
  9. Garnish with chopped parsley and orange slices before serving, if desired.

Notes

  • Pound very thick chicken breasts to an even thickness so they cook more evenly.
  • Keep the grill over medium heat because the brown sugar can burn over high heat.
  • Marinate the chicken for at least 4 hours for the best flavor, but do not exceed 24 hours.
  • Never reuse marinade that has touched raw chicken unless it is boiled thoroughly first.
  • Boneless, skinless chicken thighs may be substituted. Cooking time will vary.
