Slow Cooker Beef Bourguignon is a cozy comfort meal made with tender beef, carrots, and potatoes simmered in a rich red wine sauce. Perfect for family dinners or busy weeknights, this slow-cooked French classic is hearty, flavorful, and surprisingly easy to prepare.
Ingredients
2 lbs beef chuck, cut into 1-inch cubes
1 cup red wine (Burgundy or Pinot Noir)
2 cups beef broth
1 medium onion, chopped
4 cloves garlic, minced
2 cups carrots, sliced
2 cups mushrooms, quartered
2 tbsp tomato paste
1 tsp dried thyme
1 bay leaf
Salt and pepper, to taste
2 tbsp olive oil
Fresh parsley, for garnish
Instructions
Heat olive oil in a skillet over medium-high heat. Brown beef cubes on all sides, then transfer to the slow cooker.
In the same skillet, sauté onions and garlic until softened. Add to the slow cooker.
Add carrots, mushrooms, red wine, beef broth, tomato paste, thyme, bay leaf, salt, and pepper. Stir to combine.
Cover and cook on low for 8 hours or high for 4 hours, until the beef is fork-tender.
Remove bay leaf, garnish with fresh parsley, and serve hot with mashed potatoes, egg noodles, or crusty bread.
Notes
For a thicker sauce, whisk 1 tbsp cornstarch with 2 tbsp water and stir into the slow cooker during the last 30 minutes.
This dish tastes even better the next day—perfect for meal prep!
You can substitute beef broth for the wine if desired.
