Spooky Eyeball Tacos

  • Author: Mounia
  • Total Time: 25 minutes
  • Yield: 8 tacos 1x

Description

These Spooky Eyeball Tacos are a fun, creepy, and kid-approved Halloween dinner idea! Crispy taco shells filled with seasoned meat, cheese, and lettuce, topped with tomato, olive, and sour cream “eyeballs.” Perfect for parties or a festive family dinner.

Ingredients

Scale
  • 1 lb ground beef (or chicken/turkey)

  • 1 packet taco seasoning (or homemade blend with chili powder, paprika, cumin, garlic powder, onion powder)

  • ½ cup water

  • 8 small flour or corn tortillas

  • 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)

  • 1 cup sour cream

  • 8 grape or cherry tomatoes (halved)

  • 16 sliced black olives

  • Shredded lettuce

  • Salsa or hot sauce (optional)

Instructions

  1. In a skillet, cook the ground beef over medium heat until browned. Drain excess fat.

  2. Stir in taco seasoning and ½ cup water. Simmer until sauce thickens and coats the meat.

  3. Warm tortillas in the microwave, oven, or skillet until soft and pliable.

  4. Assemble tacos with seasoned meat, shredded lettuce, and cheese.

  5. Make the eyeballs: place a tomato half cut-side down on top of each taco. Add a dot of sour cream, then an olive slice for the pupil.

  6. For extra spooky effect, drizzle salsa or hot sauce around the “eyeballs.”

  7. Serve immediately for the best flavor and creepy presentation!

Notes

Swap ground beef for ground turkey, chicken, or even black beans for a vegetarian twist.
Add guacamole for extra flavor and a “green monster” vibe.
Prep the taco filling earlier in the day to save time before your Halloween festivities.
Use mild seasoning if serving kids, or kick it up with hot sauce for spice love
