For the Bowls:
- 2 cups uncooked jasmine or medium-grain rice
- 2 small heads broccoli, chopped
- 3 large chicken breasts, sliced into strips
- 2 tbsp olive oil (or avocado oil)
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp dried oregano
Sticky Sauce:
- ½ cup soy sauce (low sodium works well)
- ½ cup honey
- ¼ cup rice vinegar
- 3 cloves garlic, minced
- 2 tbsp sriracha
- 2 tsp sesame oil
- 1 tsp ground ginger
- 2 tsp arrowroot powder + 2 tbsp water (slurry)
Spicy Mayo:
- ½ cup mayonnaise
- 1 tbsp sriracha
- 2–3 tbsp water (to thin)
Optional Toppings:
- Sliced avocado
- Shredded carrots
- Sliced cucumber
- Sesame seeds
Instructions
- Cook rice according to package instructions. Fluff and set aside.
- Chop broccoli into small florets. Steam or sauté until tender-crisp.
- Season sliced chicken with salt, pepper, chili powder, smoked paprika, onion powder, and oregano.
- Heat oil in a large skillet over medium-high heat. Cook chicken until golden and fully cooked through.
- In a bowl, whisk soy sauce, honey, rice vinegar, garlic, sriracha, sesame oil, and ginger.
- Lower heat and pour sauce into skillet with chicken.
- Stir in arrowroot slurry and simmer until sauce thickens and becomes glossy.
- In a small bowl, mix mayonnaise, sriracha, and water until smooth and drizzle-ready.
- Assemble bowls: add rice, broccoli, sticky chicken, fresh toppings, drizzle spicy mayo, and sprinkle with sesame seeds.

- If sauce thickens too quickly, add a splash of water to loosen.
