Description

Strawberry Basil Chicken is a fresh, sweet, and savory baked chicken recipe featuring juicy chicken breasts, ripe strawberries, fresh basil, honey, and balsamic vinegar. It’s an easy weeknight dinner that looks elegant enough for guests while using simple, everyday ingredients.

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh strawberries, hulled and sliced
  • 1/4 cup fresh basil, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, garlic powder, salt, and pepper until smooth.
  3. Place the chicken breasts in a shallow dish or zip-top bag and pour the marinade over them. Marinate for at least 15 minutes.
  4. Lightly grease a baking dish with cooking spray or olive oil.
  5. Remove the chicken from the marinade and place it in the prepared baking dish. Reserve the remaining marinade.
  6. Bake for 20 minutes.
  7. Remove the baking dish from the oven and scatter the sliced strawberries over the chicken. Drizzle the reserved marinade over the top.
  8. Return to the oven and bake for another 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  9. Sprinkle the chopped fresh basil over the chicken immediately after removing it from the oven.
  10. Let the chicken rest for 5 minutes before serving.

  • Marinate the chicken for up to 4 hours for even more flavor.
  • Use ripe, fresh strawberries for the sweetest flavor.
  • Add the basil after baking to keep it fresh and vibrant.
  • For extra richness, sprinkle crumbled goat cheese or feta over the finished dish.
  • Serve with rice, roasted potatoes, pasta, or a fresh green salad.
