For the Chicken:
- 1.5 lb chicken thighs
- 3/4 cup low-sodium soy sauce
- 3 tbsp rice vinegar
- 3 tbsp honey
- 3 tbsp brown sugar
- 1 garlic clove, minced
- 1.5 tbsp freshly grated ginger
- 1/2 tsp sesame oil
- 2 tbsp water
- 1 tbsp cornstarch
For Serving:
- Cooked white or brown rice
- Sesame seeds
- Sliced green onions
Instructions
- Make the Sauce:
In a bowl, whisk together soy sauce, rice vinegar, honey, brown sugar, garlic, and ginger until fully combined and sugar is dissolved. - Slow Cook:
Place chicken thighs in the slow cooker. Pour the sauce over the chicken. Cover and cook on LOW for 4 hours or HIGH for 2 hours. - Shred the Chicken:
Remove chicken and shred using two forks. Set aside. - Thicken the Sauce:
Strain cooking liquid into a saucepan and bring to a gentle simmer. Mix cornstarch and water to create a slurry. Slowly whisk into the simmering sauce and cook for 1–2 minutes until thickened. - Finish:
Stir in sesame oil. Return shredded chicken to the sauce and toss to coat. - Serve:
Spoon over warm rice and garnish with sesame seeds and sliced green onions.
Notes
- Chicken thighs stay more tender than breasts in the slow cooker.
- Sauce thickens more as it cools — don’t overcook it.
