Description

Ingredients

  • 6 cups watermelon, seeded and cubed
  • 1 English cucumber, chopped
  • 6 oz feta cheese, cubed or crumbled
  • Handful fresh mint leaves, chopped
  • Zest of 1 fresh lime
  • Juice of 1 fresh lime
  • Sea salt flakes, to taste
  • Fresh ground black pepper, to taste

Instructions

  1. Add the cubed watermelon to a large serving bowl.
  2. Add chopped cucumber, feta cheese, and fresh mint.
  3. Zest the lime directly over the bowl, then squeeze in the fresh lime juice.
  4. Season lightly with sea salt flakes and freshly ground black pepper.
  5. Gently toss everything together until combined.
  6. Taste and adjust seasoning if needed.
  7. Serve immediately or chill for 10–15 minutes before serving.
