Ingredients
  

Pecan Clusters

  • 2 1/2 cups pecan halves lightly toasted

Caramel

  • 1 stick butter unsalted
  • 1 cup packed brown sugar
  • 1/2 cup light corn syrup
  • 3/4 cup sweetened condensed milk + 2 tablespoons extra
  • 1/2 teaspoon vanilla extract

Chocolate Coating

  • 12 ounces milk chocolate chips or dark chocolate, if preferred
  • 1/2 teaspoon shortening for a smooth texture

Instructions
 

  • Line a baking sheet with parchment paper. Arrange pecans in small clusters (3-4 per cluster).
  • In a saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup, and sweetened condensed milk. Bring to a gentle boil, stirring constantly.
  • Continue cooking and stirring for about 5 minutes, until caramel thickens. Remove from heat and stir in vanilla extract.
  • Spoon caramel over each pecan cluster. Allow to set for a few minutes.
  • Melt chocolate chips and shortening in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.
  • Spoon melted chocolate over each caramel-coated pecan cluster. Let set at room temperature or refrigerate for faster setting.

Notes

For a richer flavor, try using dark chocolate instead of milk chocolate. Store in an airtight container at room temperature for up to 2 weeks or in the fridge for a month.
