Batter and Cooking

Instructions
In a large bowl, soak the chicken and fish fillets in buttermilk for at least 1 hour (optional but recommended for extra juiciness).
In a separate bowl, mix the flour, cornmeal, lemon-pepper seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
Remove the chicken and fish from the buttermilk and coat them evenly with the dry mixture.
Heat oil in a deep pan or fryer to 350°F (175°C).
Carefully place the chicken in the hot oil and fry for about 10-12 minutes, until golden and cooked through.
Fry the fish fillets for about 5-6 minutes, until crispy and golden brown.
Remove from oil and place on a paper towel to drain excess oil.
Sprinkle additional lemon-pepper seasoning on top before serving.
Notes
For an extra crispy texture, double-coat the chicken and fish by dipping them back into buttermilk and flour before frying.
