Ingredients
  

Chicken and Fish

  • 4 pieces chicken wings or drumsticks
  • 4 fillets white fish (tilapia, catfish, or whiting)

Breading and Seasoning

  • 2 cups all-purpose flour
  • 1 cup cornmeal
  • 2 tsp lemon-pepper seasoning signature blend
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper

Batter and Cooking

  • 2 cups buttermilk for marination
  • 2 cups vegetable oil for frying

Instructions
 

  • In a large bowl, soak the chicken and fish fillets in buttermilk for at least 1 hour (optional but recommended for extra juiciness).
  • In a separate bowl, mix the flour, cornmeal, lemon-pepper seasoning, paprika, garlic powder, onion powder, salt, and black pepper.
  • Remove the chicken and fish from the buttermilk and coat them evenly with the dry mixture.
  • Heat oil in a deep pan or fryer to 350°F (175°C).
  • Carefully place the chicken in the hot oil and fry for about 10-12 minutes, until golden and cooked through.
  • Fry the fish fillets for about 5-6 minutes, until crispy and golden brown.
  • Remove from oil and place on a paper towel to drain excess oil.
  • Sprinkle additional lemon-pepper seasoning on top before serving.

Notes

For an extra crispy texture, double-coat the chicken and fish by dipping them back into buttermilk and flour before frying.
